Candy Coatings (compounds, wafers) are made from a delicious special compound manufactured by Merckens Chocolate Co. and are designed for melting, molding and dipping.Compound chocolate, also known as confectioner's coating or dipping chocolate doesn't require tempering because it is made with a trans fat free fractionated palm oil in place of cocoa butter. Cocoa butter is in all chocolate and this is the natural fat from the cocoa bean. Chocolates with cocoa butter require tempering when melted and reformed to allow them to look shiny and have a nice snap. Compoound chocolates on the other hand have the cocoa butter replaced with a plam fat so you can just melt and work with no need to temper.
Note: Coatings shipped during warm weather may melt. We cannot take responsibility for chocolate that melts in transport. Please make sure someone is present to receive the shipment. Overnight shipping can be applied for an additional costs but even then there is not a guarantee that the chocolate may not melt. If you receive coating wafers that have melted and re-hardened into a solid chunk, break it up and melt as you normally do. You may add up to 1 table spoon of Paramount Crystals to each pound if it is too thick.
